Christmas and winter are usually closely linked to fat, salty or sweet unhealthy food. To help you through this period of weight gain, we have put together healthy Christmas recipes from our team. This will give you an opportunity to try something new. As we are from various countries, you will also have the chance to give your Christmas an international flavour.
Swedish meatballs by Celia
400g pork or beef mince
1 egg, beaten
1 small onion, finely chopped or grated
85g fresh white breadcrumbs
1 tbsp finely chopped dill, plus extra to serve
1 tbsp each olive oil and butter
2 tbsp plain flour
400ml hot beef stock
Mix the mince, egg, onion, breadcrumbs, dill and seasoning all together in a large bowel . Roll into small meatballs about the size of walnuts – you will get about 20.
Heat the olive oil in a large non-stick frying pan and brown the meatballs (this sometimes takes two batches).
Remove the meatballs from the pan, melt the butter, then sprinkle over the flour and stir well. Cook for 2 minutes, then slowly whisk in the stock. Keep whisking until it is thick gravy, and then return the meatballs to the pan and heat through. Sprinkle with dill and serve with lingonberry (or cranberry) jelly, vegetables and creamy mash potatoes.
